    BBQ Question

    Threw a pork belly on the pit along with the brisket I was smoking. Plan on doing burnt ends, but never smoked a pork belly before.

    200 IT, let cool, cube, toss in sauce and back on for 30 min? That sound about right?

      I smoke my first yesterday and holy cow it was beyond good. Every piece was like eating something sinful.

        I cube and season my PB before smoking. Cook till 200 / glaze / put back in smoker till 205-210.

            I ate one cube after slicing and it was insanely delicious. Finished product should be crazy good. Brisket is money.

                    If its just a small show I would much rather do a belly than a butt. Perfectly rendered and the meat still has a hold to it. You could cut it with a spoon.

                          Thanks. Ill try cubing at the start next time like this. Cooling down and cubing is pretty dang time consuming.
