question about crawfish boil, about 'taters.

    Corn yes, taters no. I just cooked crawfish Sunday and as usual ended up with a bunch of leftover potatoes even though I cut back on the normal amount. I used the small red potatoes, maybe I need to cut them in half. I guess we will make potato salad with the leftovers

      This is exactly what we do. We call it “Cajun Tater Salad”. Take the leftover taters, cut them to ~1/2-3/4” pieces, get some Wright Brand Bacon and cut to 1/4” slivers then fry it up to medium, slice some green onions andn dice some purple onion, add Mayo to your desired level and sprinkle on some Tony’s!

        The leftover taters are dynamite the next day cooking into breakfast tacos.

          fingerling potatoes, or the smallest reds you can buy. Cutting the regular red potatoes is fine too but thye getting mushy quickly if overdone.

            This is easy to fix. Add more seasoning.
