Deer sausage doesn’t taste like sausage

    Breakfast sausage needs to be pork. Anything else is a waste of venison/beef. When using the pre-made spices I usually have to add about 25 to 50% more and I always add extra red pepper flakes. But as mentioned several times, follow the recipe and Fry up a small patty.

      I use Leggs Breakfast Sausage mix (makes 25 lbs) and mix 50/50 Pork and Venison. I grind once, add seasoning and then One bottle of Pure Maple Syrup, mix well, and grind the second time straight to the package.
      You will have to cook at a lower temp to keep from scorching the sugars in the syrup, but the maple is just a hint not over powering

        Who is it here that does the annual thread of their family sausage making day? They make a huge amount. I wonder what seasoning they use?
