I’ve tried just about every game animal in Texas and quite a few exotics. The only thing that I don’t care to ever eat again is merganser. Smelled and tasted very fishy.
I love duck if cooked properly. Even coots are decent, about like most of the diving ducks. I ground up a whole javelina while living in South Texas. Everything I made with it tasted good but kinda smelled like a dog when cooked so I can see how some people wouldn’t like it. The aoudad and other sheep I’ve had weren’t much different than whitetail other than being tougher.

I've eaten enough venison that some idiot had cooked, to not trust how some people cook anything.
I aint eatin no armadillo, I've eatin some coon but it just tasted like whatever it was cooked in, not bad not good.
I'll switch up the game though, and say that field lark aint that bad!
Back when I had bird dogs, I hunted on a place near Aspermont that my uncle had leased to hunt after deer season. While we were there, some of the deer hunters would be there hunting hogs, or just messing around, and some of them would hunt quail with us. One of the guys had a young son about 8 or so named Colt. Colt had a new .410 and he REALLY wanted to kill a bird with it, but his dad told him he had to eat whatever he killed with it. Their deer camp was in a little trap near where the rancher hayed his cattle. Naturally the lot where he hayed cattle would fill up with field larks during the day, digging in the hay on the ground, and flippin over turds to find bugs to eat. One morning after we got done hunting quail, I took Colt over to the fence by the feedin area with his .410 and we set him up with a good rest. I told him if he shot two, I'd eat one with him. The field larks came in and he shot one, then fetched it in record time. We set a bit longer and he shot another...you've never seen a happier, more proud, young man.
So I showed him how to clean them, then we marinated them for a while, and he threw them on the grill right next to the ribeyes. I won't say they were as good as a quail, but I've eaten much worse from better animals, and me and Colt had everyone wondering if it was as good as he thought it was...or as good as I told them it was.
Never underestimate the enthusiasm of a child! I hope ol Colt is still killin stuff some place. He'd be almost 30 by now...Last edited by Dale Moser; 01-13-2023, 12:21 AM.
