    Processing cost ?

    I’m dropping off 2 boned out deer for my buddies wife for 1/2 link sausage 1/2 chopped steak
    Any tips on yield and cost for an average size deer minus the back straps?
    I don’t want him getting sticker shock

    ~$30 per deer processing fee

    Looks like $25 for steaks

    $5 Per lb. for sausage
    — for me one boned out deer is usually 4 gallon bags of meat usually 7-8 lbs per bag. If they add pork at a 50/50 mix you are looking at $280-$320 for sausage.

    $310-$350 plus tax

          I normally get 30# of boned out meat from a mature hill country doe. You can assume 5# of that is tenderloins and backstraps per deer. So youre looking at 50# total of deer meat to be mixed 50/50 with pork for sausage @ $5/lb. The way I see it your looking at around $500 for sausage alone plus the $0.95/lb processing fee on roughly 60# of meat. I would have sticker shock when I got that bill. There again maybe you dont have that much boned out meat so it might be $350ish as mentioned and that wouldnt hurt quite as bad.

              Just another thought; I like Kliens because they are local, but I dropped off a couple last year that I didn't have time to process and was not happy with the results. Flavor was off. I don't know if they mix other deers for grinding but it just wasn't good.

              I dropped a couple off in Harper this weekend to try out a new facility (7E's new facility.) All this to say, there are a lot of local options around Boerne, Comfort, etc. Might be worthwhile to make a couple of calls or check out some of the processor threads on here.

                    Couple days ago i went to the local processor with my neighbor. The bare minimum for just ground meat and back strap steaks was $140. Thats double from a few years ago when i last took one in. The guy in front of us asked for some sausage and burger paddies. Im not sure what else he got but he had a bill of $375

                          I know the prices look high but they’re not out of line. I making 75 lbs. of jalapeƱo cheese hamburger / pan sausage and have close to $300 in it, not counting my time or fuel costs. I’

                            Processor we use is $3.35/lb for breakfast sausage, but a pound of Jimmy Dean at HEB right now is $4.10. All the other prices are about the same.

                            I cut up and grind one ham, and take care of the loins and backstrap for grilling/frying, but sausage is a big time commitment for one guy.

                              This is the first year I've had one processed. Tenderize backstrap and packaged loins, chili and hamburger all for 130. Had I not gutted, skinned and quarter it would have been double.
