    Processing Nilgai?

    Are the cuts different than a deer? Can you cut steaks any better than just muscling it out like a deer? Trying to decide if I want to cut one up or take it somewhere? Going to hunt the King Ranch next week. Hopefully we get one.

    I did mine just like every other animal i have ever done. You just get bigger cuts with bigger animals.

      I have cut up a few and you can cut it up like a deer or have it split and cut like a cow. It is however you want to do it.

      Personally, I would split the carcass, quarter it up (separate each side half between the last and next to the last rib) into true quarters. Allow it to chill down really well and then process it out like a cow. The meat is really good table fare.

      The downsize to true quarters is having the space needed to hang it and chill it down

        I’ve processed 3 and it’s quite the undertaking if you shoot a big bull. Not really any different than a deer in my opinion as far as steaking it out. Can get some great roasts from them too. Bowanta hit the nail on the head, if possible break down to true quarters and chill for a few days before processing.

          I would offer to process it for you at a really inexpensive price, but I really do not have a way to chill it down. I do have a saw, grinder, stuffer and vacuum sealer.

                I brought one home back in May and did it myself. I just picked a quarter/ cut to do each night until everything was done.

                Just make sure you have plenty of space to work and a good knife.

                  This is how you process animals IMO. May be some nuance between animals but in general this is how it works. Can't imagine having to do it willy nilly without the lines to follow

                    Just like any other animal. I’ve done nilgai, elk, and a steer in the driveway. All the same. Just save more steaks than a deer
