    Pioneer Woman's baked mashed potatoes and her whiskey glazed carrots! I'm not a huge cooked carrot fan but they're good and the baked mashed potatoes are a dinner on their own! I could eat a bucket full of them!

      I had this while on an elk hunt in Colorado a few years ago.

      Wild Rice Hot Dish
      2-cups of wild rice (I use straight wild rice, not the blended stuff. It’s hard to find so I buy from Amazon).
      1-full link garlic sausage (~15”) or any sausage of your choice
      3-cans cream of mushroom soup or cream of jalapeño soup
      1-can sliced mushrooms, drained

      Cook the rice per the package directions. Drain any excess water once it is cooked.
      Remove the casing from the sausage, crumble and brown in a frying pan. Drain excess grease when done.
      Mix all ingredients. Put in a baking dish, cover, and put in 350 degree oven for 50 mins and bubbling.

      Adjust the amounts as you wish. You can do this the day before to save time and it goes great with prime rib or even turkey. It freezes well and you can eat this as a side dish or a main course.

                Options are limitless since beef goes with so much.

                Perhaps instead of simple mashed potatoes do something fancier like an au gratin or scalloped recipe.

                Cream corn

                Sauteed asparagas and/or brussel sprouts

                Good hearty mac and cheese

                  Smashed roasted new potatoes - boil then smash/season/bake
                  Char broiled oysters
                  Crack bread
                  Street corn

                      cube red ,yellow and sweet potatoes
                      cube some butter nut squash
                      put in zip lock bag with oil,toss to coat
                      add salt,pepper, garlic powder ,oreagano and thyme
                      place in foil pan or baking sheet
                      put in oven at 350 or on smoker for 45 min or so

                      charred brussel sprouts will work good also

                          I like loaded mashed taters.

                          Lately I've been doing roasted cauliflower and it's been a hit everywhere. I just cut the cauliflower crowns off until you have a bunch of pieces about the size of a quarter-50 cent piece. Put them in a ziplock, pour in a little evoo and steak seasoning, close it up and mix the bag all around, repeat 2-3 times. Spread the crowns on a bakin sheet covered in foil for easy cleanup and bake @360 for 40-45 minutes. Super easy, and everyone loves it. You can mix in okra as well, but it needs to cook longer in my experience.

                              Without a doubt the best side dish for rib roast is a good Louisiana rice dressing. RaginCagin pretty much nails it with his recipe in this thread.
