      As mentioned there is a Huge learning curve with stainless but once you get it, you got it.

      Most culinary arts make you cook eggs over and over because of their sensitivity to temperature. My MOL is one that never understood that. She has one temperature and that is HIGH lolol.

        Debuyer might be the best pan that I have used.

        I have an 11inch carbon steel that once seasoned, is an absolute joy to cook in. They are pricey, but just catch a sale

          I didn’t know it was called the mercury ball test but I do that when heating cast iron, carbon steel pans or my favorite carbon steel woks and stainless. Also to clean cast or carbon.
