Curt, tritips are easier to cook (for me at least). They're like a brisket that you can get done in less than 3 hours!! The thing to watch out on a tritip is how you slice them up. They have a real funky grain as they're really 2 different muscles that are bound by connective tissue... I screwed my first one up bad... Cooked it well, but when I sliced it, half of it was great. the other half was like eatin' a rubber doll! Watched a few YouTube videos and got my cutting up straight after that!
Oh and that pan of ribs looks like it's fit for a king's table!!

When I cook beef ribs, I wrap them in aluminum foil and pour a jar of Picante sauce over them. Leave them wrapped for
hours and open the aluminum foil and cook another 1-2 hours depending on tenderness. When the bone pulls free from the meat, they are done.
