I'm building an office/clean space in my shop. Shop is c purlin with roll insulation and tin on top. I'm framing the walls to sit against the purlin not using purling as part of the wall. My question is do I run Romex through the studs like a house or so I need to run conduit between the studs and existing insulation?

If it were mine, I'd run romex between the studs and the insulation for those walls. No need to drill through those studs, and you won't see it anyway. I'd actually lay it on top of the purlin that all your stuff is sitting on right now. It would also be easy to fish romex along that wallspace in the future as well. The other walls and ceiling would be run through the studs, top plates, and ceiling joists just like house wiring.
