Wife picked up an 8 pounder earlier today. I usually cut a portion into steaks and keep a 4-5 pound section for a rib roast.

I smother mine in seasoning and oil. Get the coals nice and hot and roll that sucker around until its charred good. Insert probes, move offset, and pull at desired IT and rest.

Oven or smoker at 225 until 115 IT. 4-5 hours.
Oven at 500 until 125 IT.
Rest an hour

Are you sure it was “Prime” Rib Roast and not Select Rib Roast?

If their selling Prime at $4.77/lb, I’m heading there now and buying 30 lbs of it.

Ok, found the ad. It’s Select Rib Roast, not Prime, but still a dang good price. What’s crazy is in the same ad they have select ribeye steak for $6.97 per pound which is the same steak cut from the rib roast LOL. Buy the rib roast and cut the steaks as thick as you want them.
