8 foot is likely all the mower you need for what you are doing. 3 point is easier to transport than a drag type. 60 hp. with a cab is all the tractor you need. 10 foot 3point mowers are historically kind of hard on tractor lifts, so if you went 10 foot, I'd get drag type. Picking the 3 point up and backing up, or loading on a trailer/unloading is easier. Mowing while backing up is also easier, but it does put overhanging limbs closer to you. Sounds like you are only mowing about 25 acres total on that place.

What other models should I be considering?
I'm used to the power shuttle transmission. I've never driven hydrostatic. Seems like a good way to make your foot tired if you are just shredding down a long road. Any tips here?
What other options should I make sure I get on a Kubota?

Excellent choice on the tractor! Mine is 62hp at the PTO and doesn’t even notice my 8’ cutter and handles my 15’ great even in thick tall growth.
BIG NO to the foam fill.
Also a no to Slime if your going by brand name. Your dealer should carry a quality tire sealant that is also compatible with water should you decide to add ballast to your rear tires (recommended)
