Don’t like liver but heart is good. I take the heart fresh, season with fajita season with some lime and make tacos.
This, and be sure to cut all the silver skin off that surrounds it or it'll be super tough. I never freeze it, always fresh. It really is good. My picky kids even like it.
Definitely try them both, zero reason not to as long as they're fresh (which is apparently longer than I'd previously though). I used to always save them both and cube it all up and fry it for adding to the dogs' food over a few days to boost the nutrition, but not anymore now they're all mine.
