    Help! Pork Butt Question

    I smoked a 5lb Boston Butt and it finished three hours before we planned to eat ( right around 200 degrees internal temp). I have it wrapped in foil, in a covered aluminum roasting dish. I placed the whole thing in the smaller double oven we have. I do not have the oven on. You think it will be ok till dinner at 5pm when I plan to pull it apart for pulled pork sandwiches?

        It should be perfect but if you think it’s getting a little cool just turn it on for 15-20 minutes to bump the temp a little and then turn off. Personally for pulled pork I take mine to 210 and wrap and rest.

          I probed mine with my thermometer and there was pretty much no resistance. Sucker was just about falling apart in my hands when I was wrapping it up for resting..

                I would usually pull mine and put in a cooler. Put an unfolded towel in the bottom, then the pork butt, followed by a towel on the top. Would stay 4 hours in there with no issues.

                  When I took health department classes, 4 hours was your window before any issues arise.

                      I'll be, I did one today also. Pulled mine at 4:00 at 205 degrees. Drained the juice in a bowl and wrapped it in a towel and put it in the ice chest till 6. Gonna pull it, reheat that juice and pour it over the shredded pork.
