    Joe Rogan podcast #1676- a Texas wild game chef

    Author, chef, restaurant owner, and Hunter talking everything wild game. He mainly talks about hogs. He covers several topics that are “controversial” in the hunting world.

    Very Interesting to hear what he has to say.

    A couple of things he said. The size of the hog is not what makes some of them taste bad. It is the stress from the kill. A trapped pig has greater potential to taste bad. A quick surprise kill has better chance to taste better.

    He touches on icing game meat. His method is cold and dry. He never lets his meat soak in water. He puts the meat in a non-scented contractor bag and then covers with ice.

    Way more topics are covered.

    Just got done listing to that episode. It was great. Very good info. I was wondering about the non scented bag? Is a regular construction trash bag non scented? Or a black trash bag?

        Yes I mistyped game bag. I meant non-scented contractor bag. I edited my post. I’m going to try it on the next animal I kill

          He’s also on numerous Meateater episodes. He has a restaurant in Austin named “Dai Due” that only uses locally sourced seasonal ingredients that I’ve really wanted to try out.

          His method of contractor bag on ice, been doing this for as long as I can remember. Sometimes ice gets in the bag and gets the meat wet but as long as it stays cold it’s not a big deal. There is a definite difference in taste and tenderness with against meat for at least a week than not aging. As far as dry vs wet, my taste buds aren’t refined enough to tell the difference.

            That one was good. The one with Clay Newcomb was even better. It got me to listen to Clays podcast and it's fantastic.
