    Dehumidifier for meat aging

The other meat aging thread got me to thinking. I have an “apartment” sized fridge and I’ve added a digital thermostat to it. I’m currently lagering some homebrew, but thinking I could use it to dry age this fall.

The one thing I’ve noticed is it gets tons of condensation inside. Not a problem with the homebrew in its’ sealed container but definitely an issue for dry agin.

So who’s set up something like this at home? What dehumidifier are you using?

You can buy special bags to dry age beef that work with a standard refrigerator that does the same as a cooler. Another method I use is wrapping in cheese cloth and putting in a standard fridge but you have to change out the cloth routinely. They sell plug and plays. Just google charcuterie plug and plays. Will handle temp and humidity.

Thanks, I’ve used inkbird temp controllers for years. I guess I’m not surprised they make one for humidity as well. Good article.

What about bacteria? I'm ignorant in the subject...
