Don't know anything about getting your own meat back but Penshorns in Marion makes the best fresh sausage I've ever tasted.

Woodburys or Schotts would be my vote if I was coming down I-10, although I mostly use Primos in Hondo due to convenience to my place. I’ve pretty much used all of the processors around San Antonio to the South and West, and those are the three that I would trust the most.

Klein’s is where I would go.

Also a place in Comfort. Alamo I think. Haven't taken anything there, but have bought hog casings there. Haven't heard anything bad about them.
Kimble Processing is great. Do all my buddies exotics, had my axis don there.

Ask for Gary. Been using him for 11 years to process my Axis, Whitetail and Hogs. He is off I-10 in Kerrville.
I've used these guys for probably just as long. They do all of my processing and my taxidermy work.
