    Snack stick chile question

    I am making up a batch of snack sticks this weekend and this batch will feature cheese and instead of jalops I have a New Mexico green chile blend. Hatch and others. They smell so good.....drool... I digress.

    These are rated hot and Im estimating the flakes to be a tad hotter than jalops.

    What say the brain trust? How many tsp per pound. Like some heat but not looking to sweat. I regularly eat hot chiles of course Im a Texan.

      Can't help with that either - I do love some hatch chile's though. Love the flavor and love to mix them with some hotter peppers for some salsa for a great mix of flavor and a little heat.

      I would say make a small batch and see how you like and adjust up or down from there.

        Make your mix and fry up a little patty to taste test before casing the sticks then adjust to your taste and repeat until it’s perfect.

          This will be my go to if no one has a good recipe. There are a million forums that have suggestions for jalepenos but not anything else. 4-5 tsp per pound seems average. I will go lighter and see what it does if no one chimes in before tomorrow.

          Ill post up results when I get to it.

            Hatch can range from mild to extreme heat, taste them first then add to your mix.
            I like their flavor better than jalapenos.

              Ended up 4 tsp per pound. 5 would be okay as well but think the ladies and kiddos might find that too warm.

              Honestly in a smoked snack stick the seasoning and smoke over power the chile. Heat is there but probably could have used any chile and it wouldn’t have made a difference. Will try on a regular smoked sausage next time. They are still absolutely amazing.

                  Ill wait till the smoke absorbs/settles and give my final say. After letting it sit for an hour I could taste the hatch more pronounced.
