I made chorizo from a axis I shot back in February. I chub bagged twenty or so pounds but I took another 20 Lbs and stuffed it into links and smoked it. Came out fantastic!
AC, How greasy was it with that mix ratio? Just asking cause imo the greasier the better the chorizo and have yet to make any chorizo of all the stuff I make every year and have experimented with.
If it ain’t makin a mess it ain’t right.
This is a good mixture. It could stand to be a little greasier
