    Pressure canning

Good morning i and my wife are putting in a big garden. We need some good advice on how to pressure can things. The books we got are not real clear. Sure could use some sound Advice so we do not get hurt or sick. 281/381/7772. Thank you.

Many vegetables don't require pressure for canning. Nonetheless, youtube has all the answers you seek.

Some of the companies that make canners/supplies have instructions on their website available for download.

I recommend only using official recipes because improper canning can be extremely dangerous.

Yep, YouTube is your friend. Vinegar is your friend if your not pressure canning. Like was stated, not all stuff needs it. Im still learning and sure wish I would of picked my granny's brain about it before she passed.

I have canned pretty much everything. I learned a lot from YouTube videos.

this. I 'can' a ton out of the garden. Salsa, tomatoes, relish, pickles(all kinds), etc. Green beans require pressure canning. Can't speak for meats personally.

Yeah stay away from YouTube until you get the basics down. I would recommend getting an all American pressure canner. Unless you really neglect it your great grandkids will be using it. Others like presto the seals go bad and have to be replaced. It will come with instructions. Get the “ball complete book of home preserving” book. It tells you how to do water bath and pressure canning depending on what you are canning.
Until you know which canner I’m not sure if the instructions will be the same.
