Since it’s cold and everyone is going crazy

    Let’s talk canning meat.
I did my first batch the other day. Bought a bag of chicken and thawed it out after watching a lot of old lady videos on YouTube.
Acquired a vintage pressure cooker for $5 and a lot of mason jars. Let me tell ya, that dang chicken is fork tender and amazing flavor.
I’ll be doing more this week ( chicken, link sausage, and probably even a need stew)

I’ve always wanted to try this. What is the shelf life for that chicken?

How would you prepare it if you were making a meal. Like chicken salad or something?

The shelf life is 5 or more years, some of those old ladies say 15-20 years.
I ate one jar straight out of the jar at room temp. For meals, flake it apart and put in soup, dumplings or add Mayo for a chicken salad

I bought a pressure canner last year and never got around to using it. Thanks for the reminder.
Now I have a reason to shoot another deer...
