Iām am a chef and pit master in my own mind. Love to cook and grill protein and have since I was young.
I think that yesterday I hit my pinnacle as far as the best thing Iāve ever grilled.
Was blessed with an Axis doe couple weeks back. Took one of the backstraps and cut two 8ā prime sections. Cut the strap to roll it out to where it was about 1/2ā thick and a 4āx8ā slab. Seasoned with Season-All on both sides and put a half block cream cheese and 5 asparagus inside. Rolled it and then wrapped with thick cut bacon and then grilled over mesquite for an hour at 275. Was the most amazing venison Iāve ever had. Wife and kiddos felt the same. Definitely gonna be a repeat recipe and now axis are on my mind a LOT.
