    Grilled stuffed Axis backstrap

    I’m am a chef and pit master in my own mind. Love to cook and grill protein and have since I was young.
    I think that yesterday I hit my pinnacle as far as the best thing I’ve ever grilled.

    Was blessed with an Axis doe couple weeks back. Took one of the backstraps and cut two 8ā€ prime sections. Cut the strap to roll it out to where it was about 1/2ā€ thick and a 4ā€x8ā€ slab. Seasoned with Season-All on both sides and put a half block cream cheese and 5 asparagus inside. Rolled it and then wrapped with thick cut bacon and then grilled over mesquite for an hour at 275. Was the most amazing venison I’ve ever had. Wife and kiddos felt the same. Definitely gonna be a repeat recipe and now axis are on my mind a LOT.

    Good lookin eats. I have a freezer full of whitetail meat. 2021 is the year I make time and money to get some axis. I’ve had it before and really liked it. May have to try your recipe with WT loin.

        I have stuffed mine with chorizo and another time with smoked lobster and last week with sautĆ©ed mushrooms and jalapeƱos and blue cheese. Can’t decide which is best.

          Sounds freaking incredible! I like that you coupled it with a Real Ale Axis IPA. Very fitting!

            Now that sounds excellent. I really like the idea with asparagus. I’ve done the one from here with boudin and cheese, which was outstanding.

              Throw out the asparagus and replace it with boudin!

                        Doing any meat this way is really good. Try different combinations of things you stuff it with, boudin w/ pepper jack is my favorite as well as spinach w/ provolone.

                          I killed an axis on my place. Not sure where it came from but it’s my blessing I guess. I will try this.
