I’ve never watched Star Wars, but my kids want to so I’m going to watch it with them. So do We follow the release dates or the chronological order?

we did it by release date and then went back and saw them in order.

I wore out the original trilogy on VHS.
New ones don't carry my attention like the originals. I'd have to start there.

Watch Rogue One, Ep 4, 5, 6.
Then Clone Wars and Rebels
Then Mandalorian.
The rest is aweful acting and cgi (ep 1,2,3) and social Justice preaching (ep 7, 8, 9).
Solo was just bad.

Not really, it would help to watch Clone Wars and Rebels more than the movies to fully get into Mandalorian, but its not necessary.
If you don’t want to watch them all, here are the essential episodes:
