Deer processing question

    Used to process all of our deer and hogs myself. Now though I have two processors who do it just the way I want to and I use them.

    I do not have the time available to do it myself anymore.

      From what I gather, it all has to do with the USDA. A lot less red tape if you use pork from a verified facility VS from a wild hog

        that may very well be true, i understand there may be additional restrictions with wild pork but it's strange because i've noticed it's about 50/50 on processors that will take it. another opportunity for someone because that industry (hog hunting) is growing with the hog population. I looked into trying to ship wild hog to Europe about 10-12 years ago, the europeans were already on the "organic" kick and were paying ridiculous money for it. unfortunately there were some fda hurdles. i was just going to ship it over in a refer container.

            Unlike a lot of the people responding... I use a processor.

            I was on the lookout for a new processor for the last couple years.

            I will now only use Republic Butcher Co in Round Rock.

            1. Get your deer back
            2. Quality of product
            3. Open year round
            4. Convenient location and optional drop off at my taxidermist shop
            5. He is a trained chef- second vote for quality of product.

            Dont think I would entertain using another since I am happy. Two years ago.. I would have tried as many as it took to find a good processor that I trust.

              I use Joshua deer processing because the place is always super clean, and they vacuum pack everything for no extra money
