I know a hunter in the hill country that was having lunch at the camp and a Buffalo walked up. They shot it and it took 16 hours for 3 guys to get all of it on ice. Said he would never do that again.....

Looks like s youngish cow bison and the meat would be awesome.
If you get to harvest it, pick a cold day. Use a tractor or something to hoist it for gutting.
You should be able to take in early am, and have it on ice or in a walk in by mid afternoon.
Hang it for about 10-14 days though before cutting up.

Hey midlo - I sent that pic to a guy I know in Cisco who does work for all those high fence guys around there. His response:
“Shoot it. There have been several wandering around the area for the last 2-3 years. Last Spring I hauled 3 of them to the sale barn for a rancher who managed to pen them on his place. Game Warden said you can shoot em’ if they’re on your property”

When explorers came to America from Europe they named the animals after animals that they were familiar with. So a bison looked like a buffalo even though is isn't. Just like a javelina isn't a pig, a pronghorn isn't an antelope and a mountain goat isn't a goat.
