You will love the bigger grinder. If you don’t have one already, a foot pedal is awesome for grinding and stuffing sausage

Man that is awesome. Way to go. I was thinking about doing something similar for my house on a smaller scale. A cooling room and a place to butcher them... This is definitely inspiration, but wouldn't be to the same scale. Great job!!
