    We don't sell our eggs either, but my wife's hens are getting old now so we only get 2-4 a day... before that tho we gave them to family and friends...
    Regarding care, if you don't wash them you can keep them unrefrigerated for 3-4 weeks or even refrigerated as long as you don't wash them. All eggs should be washed before cracking/using.
    There's a good quality check you can employ when using yard eggs. Since you should wash them first, use a bowl or sink of water deep enough for the egg to float in. Put the eggs in the water and if they float, throw them away. A real fresh egg will lay on the bottom sideways. An egg that's been sitting in a carton for days/weeks will stand upright in the water but if it is good it will not float. If it floats, don't eat it. If it's your own chickens, throw it back in the pen/run/coop. The chickens will gobble every bit of it down shell and all.
