I have the Fanatic bibs and jacket. 10 to 40 degrees it works well.
I have a Stratus and Fanatic vests as well. I have a good camo hoody (of another brand) that I layer under as needed and one of the vests depending on how cool, blind vs stand. My next purchase will be a Stratus jacket and bibs.

I think the Stratus line is the most versatile and probably best suited for Texas hunting.
I have waaaay too much of their stuff. I tell everyone that if you have one piece of Sitka get the Equinox Hoody. It is the piece of gear I grab the most and it is dead quiet for bowhunting.

I'd also suggest the Stratus Beanie. Its great a blocking the wind. The Fanatic beanie is huge and makes you look like a Russian and is way too warm. I like the Fanatic Glove since it doesn't have finger tips on the index and thumb and you can shoot with it on.
If you aren't set on all Sitka, for your bottom base layer skip the Sitka Merino Heavyweight Bottom and get the FirstLite Kiln Zip Off Long John. Because they are zip off you can take them off without removing your boots. Just drop your pants, zip off the long johns, pull up your pants and you're on your way. That is really nice if you shoot something and you don't want to sweat while tracking or if it warms up after the morning hunt and you are going to do a little work on feeders or stands before going back to camp. Since I bought those FirstLite zip offs I stopped wearing the Sitka bottoms. I should probably sell them now that I think about it.
I also have the Sitka ESW for really hot weather. It is awesome but you would never use it as part of a layering system so I wouldn't buy it until you have all your layering system built out and then if you only wanted a shirt and pants that would be used when its real hot would I then get the ESW.
