Red snapper, Mangrove and small cubera snapper, smaller grouper, Mahi, wahoo, AJ, African pompano, ling. Then Tuna is kinda in its own class. As far as bay mangrove snapper, flounder, trout, whiting, redfish then small black drum and sheep head.

Guys, he said he was going bay fishing. Keep focused.
Trout is the best to eat, about any way cooked.
            Redfish is good.
Flounder has no taste, it's what you season it with. Don't get me wrong, but try baking an unseasoned trout alongside a unseasoned flounder and you will see the difference. I cook flounder stuffed with lots of butter, fiesta seasoning, crab meat, shrimp pieces and breading. It is awesome. I don't do that with trout.

Trout are good. You are not gonna find a guide that will sheephead fish I’m guessing. They are not fun to clean. I think they are as good as some of the offshore species. Mangroves are not often targeted by bay guides.

Who you book with will dictate what you go fish for most of the time

But I always keep my eyes peeled when trolling. I’d try mermaid

                Always forget bay snapper

For inshore it’s flounder, trout, and then redfish. Croaker are pretty good if you can find them big enough to fool with as well. Redfish aren’t worth the trouble for me, but fun to catch. They’re a lot more work to clean and to make taste good, unless you’re a fan of a fishier tasting fish.

Redfish. Trout is good. Not really a flounder fan.

Triple tail if you can find one floating near something on the surface. But it is slim in the bays.

Trout are next in my opinion, but eat them as fresh as you can. If you freeze them for months and then eat them, the taste changes some sliding them down the list.

                          Golden Croaker
                          Flounder
                          Redfish
                          Whiting
                          Black Drum

WRONG! They eat just fine, but good lord is it a pita to keep them and clean them nasty slimy things! Anyone who puts redfish over flounder should get their head scanned! Sheepshead actually eat good, but its not worth the effort to clean the dang things. I can go catch a limit of trout and have them cleaned in 5 minutes with a regular ole filet knife.

Redfish on the half shell is the best. Freshly caught trout sautéed/blackened is a close second for me. Flounder is third, then snapper.
