Guys, he said he was going bay fishing. Keep focused.
Trout is the best to eat, about any way cooked.
Redfish is good.
Flounder has no taste, it's what you season it with. Don't get me wrong, but try baking an unseasoned trout alongside a unseasoned flounder and you will see the difference. I cook flounder stuffed with lots of butter, fiesta seasoning, crab meat, shrimp pieces and breading. It is awesome. I don't do that with trout.

Trout are good. You are not gonna find a guide that will sheephead fish I’m guessing. They are not fun to clean. I think they are as good as some of the offshore species. Mangroves are not often targeted by bay guides.

For inshore it’s flounder, trout, and then redfish. Croaker are pretty good if you can find them big enough to fool with as well. Redfish aren’t worth the trouble for me, but fun to catch. They’re a lot more work to clean and to make taste good, unless you’re a fan of a fishier tasting fish.Last edited by bullets13; 10-01-2020, 01:10 PM.

Triple tail if you can find one floating near something on the surface. But it is slim in the bays.
Trout are next in my opinion, but eat them as fresh as you can. If you freeze them for months and then eat them, the taste changes some sliding them down the list.
