Depending on the kids age you can trotline along the bank at night. Some of my best memories are trotlining with my grandpa and dad years ago. We didn’t have a boat. We would cut some willow poles and use a single bit axe wadding chest deep and drive them in if there where no trees to tie them off.

Set them along cattails or willows close to deep water. Bait out at dark with live perch or fresh dead shad.
Run them at daylight next morning.

Man that brings back good times! We would drag a tote sack behind to put the fish in.

I was 9 or 10 when we started doing this. I would be neck deep standing on my tiptoes holding the light while they baited.

Lots of good advice above on catfish and perch. Good luck.
