I have 1 Honda 6500W & 2 Honda EU2000's. Very reliable. 1 EU 2000 will run a 5000 BTU window unit just fine. It will even idle down when on Eco Mode.

Generac and Honda are both top shelf companies...IMO.
My camper is a bumper pull and I opted for two Predators from Harbor Freight which I link for 30amp. I wanted smaller units that would fulfill my power needs and I could move without help and more importantly...the wife could move without help.
Go bigger than just your total camper electrical needs...expect additional external use.
Good luck MrVasquez.

I thought long and hard about my generator purchase about 3-4 years ago. It was for our lease camp to run lights, window unit, heater, etc. Someone convinced me to try the Predator which is a Honda clone. He had compared the two and showed me the differences in them. I got one, the 3500 and it has been great. In all honesty the only negative is that it isn't as quiet as the inverter. I have ran it for several days non stop, not even to fuel it. Starts on 1st pull most of the time, never more than 2 lol. My son bought the bigger unit, 5 or 6k?, and runs his 5th wheel off of it. Neither have had a single issue in the past 3-4 years.

With 2 AC’s you will need dual 3000’s or a 6500 and even the it will trip if the wife fires up a hair dryer.

I was in the same boat Jason. Wanted to Honda EU2000's to run in par. Ended up going with the Champion Duel Fuel 3400 inverter. paid around 1100. Run it on Propane (Which is a little bit lower wattage output) and it runs the camper with AC on and even the coffee pot! Still has enough juice to run lighting around camp at night. It is very quiet
Ive got a buddy that's been running the predator inverter (770.00) with zero issues for a few years.

Will let you know what i think, as i need to break it in and plan on doing so when it comes in.
It is super quiet and started right up. Ran for a little while with no load, then used a power drill for a little while, then plugged in a small heater, then a larger heater. No problems at all. So far, i am really pleased with it. Probably take to cabin this weekend and let it run all my Window Unit and all lights and see how much power it pulls.

Don't let one bad apple turn you off Honda engines.

I have a Honda 5500 that would consistently trip if we weren’t selective about what we ran in a 31’ camper with 1 15K AC.
Run coffee pot when AC kicks in = trip
Run micro when AC kicks in = trip
Run AC and hairdryer = trip
The list goes on but changes if your camper is 50a or 30a. Ours was 30a as most are with a single AC.
