    Good pig

    A friend on mine up north of Bonham got one hanging.
    Lot of work ahead for his wife to get this one into the freezer.
    No Idea on the weight yet and doubt they even weigh it. Gonna say it's pushing 300.

                  I was a butcher 18 years and owned. A processing plant. I could smell the meat of a domestic boar when I walked in the cutting room. Now for the kicker.... These Russian cross boars are totally different. If you can skin them clean the meat is amazing. Even off large boars like this one. If you haven't tried it you need to. Places with mostly domestic blood won't gave as much luck but if your hogs look like that one? Give it a try.

                    Oh, I don't have a problem with eating it Steve but there's no way I would with this heat. Too much bacteria growing at exponential rates. If I could process it in a cooler, i would consider it.

                      FACT! Had the same experience over the years. If you can drop a big Russian strain boar in his tracks and cut him while he's still kicking, and get the hide off him quick, It's some of the most flavorful pork you'll ever eat. If they've been rutting, or if chased by dogs and generally "all stirred up", he'll stank pretty bad and won't be worth the effort.



                      I also agree with Tracey. I wouldn't kill one this time of year that I intended to eat...

                          My friend said this one wasn't rutting and did not stink at all. They are well equipped to process it and know good hogs from bad since they been trapping and eating feral hogs for a long time as well as all their neighbors. I'm guessing a lot of this one will get the smoke treatment.

                            This is what I run into sometimes a short time after I start skinning some of the larger boars. I tried taking a chance once on a 150lb boar with a hint of stink and it didnt end well. lol Almost turned the wife away from all pork forever.

                            I will have to wait for one with more of the razorback look and try what you are saying.

                              Even when you put a rutting boar carcass in a cooler with a nice sweet smelling whitetail doe the skunk stink will permeate the deer carcass and if you cook any of the deer inside your house it will then stink up your whole house. Not only that the meat will taste like the boar smells. Been there done that. Your best bet is to leave a skunk smelling boar lay where it falls. Been there done that too
                              I don't know what it is about boars that cause them to have that smell when they are breeding but you need to make barr hogs out of them when they get nuts big enough to see. One stinking boar can ruin a whole slaughter house full of good meat. I always stay away from cheap store brand boar hog bacon and sausage. Nothing the meat packers can do to get rid of that stink and you can tell it when you walk into someone's house if they been cooking cheap boar hog bacon. I've even run across it in restaurants, especially Waffle House.
