      That looks perfect- I never thought about a smoker then high temp sear. will try it soon. That is cook full flavor and how red meat in meant to be eaten.

          My Dad used to say when the cow dies the meat is done.He would cut a small piece of raw steak and eat it, if it was tender he knew he had good one. I guess you say the same about that Axis dead and done.

            That outside looks like greatness but there is a little too much ultra in that rare for me.....I'll eat rare to medium rare but I'm out on ultra.

                                My dad used to eat all his steaks that rare if not more so. He never checked the temp. but I know for a fact they were still cold in the middle. They always looked good, so I would try them and think I would like it, but Not for me, can’t do it. I like med. His way of cooking them was to get a cast iron skillet super smoking hot, through the steak on and maybe have a sip of beer. Then flip and in far less then a minute it was done.
