    Ultra rare Axis backstrap just off the Yoder

    Seasoned with Hardcore Carnivore Black and smoked on the Yoder at 180 degrees until the internal temp was 80 degrees. I took it off and brought the grill up to 600 degrees and seared all sides bringing the internal temp up to 90 degrees. Like lightly smoked carpaccio.

                    Oh Lord. I was hoping this was a picture of an ultra rare colored axis. Like a black or albino axis, on the hoof. Not raw meat. What a letdown!

                        Reckon that’s any better than cooking it to 120Ish? I think I prefer the texture of rare on my red meats better than sub-rare
