I recently grilled some lamb chops for my family. I served it with a chimichurri sauce and the combination was out of this world (it was a cilantro-based chimichrri rather than a mint-based one because I love cilantro and often find mint too overpowering, even in small doses). I also like a good chimichurri with lean steaks (I.e. flank or skirt steaks).
