Ended up being pretty dang good. Perfect tenderness, great bark, flavor was amazing, was a little dryer than I would have liked but not bad at all. Only thing lacking was the smoke ring but that is really all I can complain about so I’m very happy. Family scarfed it down!

It does have a little ring to it but not what you would get off a stick burner after 16 hours. But I agree 1000%... smoke ring don’t mean crap to folks just wanting a great tasking brisket. Ain’t no competition going on here today.

Had the same thing happen on my Pit Boss a few smokes ago...ended up replacing the thermometer and all has been good...(I bought it cheap as a return).
I panicked but it still came out great...what kind of pellet smoker are you using.
I've invested in a Thermoworks Smoke for monitoring and it has been really helpful. Ill post up next time they have them on sale
