I cooked these wagyu flat irons a couple of nights ago. They were outstanding!
I just put a small rack of wagyu chuck ribs on the kettle for this afternoon.

Did a 5# bone in pork shoulder today on the 22" kettle. 275 -225 for 8 hours. Wrapped at 160 and pulled at 195. I really think this was the smallest pork shoulder I have ever cooked in the last 50 years. It came out good.....just saying.....cC
