Would a 200amp service be sufficient for a 1200 sq ft cabin, hot tub, 40x80 shop (welding machine/air compressor) and a camper hook up?

The application for New Electric service asks "Size of Main Disconnect in Amps required"...Given the previous info, what would you recommend?

You can do all of that easily. I have 1,600 sq ft living, 2,475 of shop including air compressor and welding machine, hot tub and a 30 amp RV plug on a 200 amp service.

200A should be sufficient, the next size up is 400A. 2/0 wire is max for a 200A disconnect as well.

Yes. Use a feed thru panel as your disconnect that way you can come off it to your shop. Pm me and I will help you lay it out

200 amps is enough and if you can put it between your cabin and shop. This will save you a lot on $$$. By keeping your runs shorter you can save money on wire and size.

I run my house and two shop building off of a 200A panel that has 4 50 amp. main breakers. I feed thru the house panel with 100 amps of wire on two of the 50 amp breakers to small 100 amp load centers in each bldg. My house is only fed with 100 amps overhead from the pole transformer. Been this way for 25 years.

This is the 200a panel in the house. Four 50a breakers at top. I can kill all the power to everything with these mains.
