I know we have our Matthews people, our Hoyt people, and our Bowtech people. But seriously, what is the difference between the bows?

Actually, that's sorta like asking the difference in a Ford and Chevy (and that'll usually start a firestorm), but as said above - most time it's just a matter of personal preference.
Mathews has tended to come up with new concepts and ideas that have caught on and done well and the other companies are quick to chime in an make their own version of the same concept and some of the other companies introduce their own new concepts too.
So - it's pretty much a matter of picking which bow shoots best for you and is in your price range. Most of the bows on the market today are pretty good quality stuff.

These days all of the major manufacturers are making very good equipment so it really is just a matter of which one feels best to you. All bows have some sort of trade off; it might be faster than the others but heavier or lighter but louder, not as forgiving, etc. I've always tried to find the best balance between shootability, speed and quietness. That being said, I don't think I'll be leaving the "dark side" any time soon.
