Live outside of Waco, and looking to plant a tree to help with water runoff. It will go next to a outdoor kitchen patio, to help with the water runoff, as it is washing out the ground. Anyone done this before?

Bermuda grass or St Augustine grass...depending on length of sunlight exposure would be much more efficient. Using a tree will likely exacerbate your issue and eventually cause ponding by not allowing proper run off. And...a tree being right next to a patio...the root system will begin to wreck havoc on the foundation and substructure...and eventually super structure too.
Its always best to cut and use a swale to move water over the soil surface. Some strategically placed stones could go really far too to direct water movement.
