          Wife is making chicken and dumplings, I'm watching McMillian on tv and later I'll finish my band of brothers movie for about the tenth time.

            You can slow cook or insta-pot a pork roast or chicken breast and season to desired taste.

            I use the following taco seasoning plus the addition of.
            Ancho and Guajillo chillies ran through a blender with chicken stock.
            Add this mixture along with onion and garlic to the cooking pot and cook till it's ready to pull apart.
            After pulled add rotel and additional green chillies. For some extra spice you can add some Chipotle peppers.

            For the enchilada casserole I use red and green hatch enchilada sauce. Layer sauce, meat, cheese, beans if desired and tortillas. Use ample sauce as the tortillas will really soak it up.

            I really like to make tacos the day I cook and use the left overs for the casserole. Food for days.

                                Groceries for the week.... pot of chicken and andouille sausage gumbo and a pot of red beans with smoked tasso. Fresh fried gulf shrimp to snack on while stirring the pots. With a nice glass or three or four of Forty Creek Confederate Oak Reserve.
