        it is #6 that i use.....I'm pretty sure there was another thread on this that mentioned #6 tasted a lot like Jimmy dean's sausage. That's what first got me to try REO. My wife is a Jimmy Dean's fan and picky.....she didn't notice a difference when i made it.

        My daughter shot a pig and we made the whole thing into breakfast sausage. I add some straight pork fat to the mix when i make it out of a wild pig. usually about 1lb of fat to 4/5 pounds of pork. I like my breakfast sausage to be a little greasy as it's frying.

                Reo is the brand we use.
                Country Pan for the breakfast sausage and Dobesch for the smoked link sausage.

                            I had to come back and edit this. I was trying to track some down for you and realized they have a couple of venison spices. I think it may have been one of those so I dont think I have tried the pan version.
