    How about a live Axis Jerky makin Thread

    Won't bore you with the Cutting of the Roast and Seasoning/Curing it for at least 24 hours but finished cutting it up yesterday and ready to start smoking today. Got the fire started in my trough feeder the deer didn't care for, laid them out on the pit and will cook them ~ 2hrs. Been on an hour and just flipped them Ended up with just under 20lbs to do. The rain almost scared me from doing it on the pit, but Im hoping it will hold off on the heavy stuff until I finish.

      About to pull off the first batch. No I do not have a meat slicer. May be in the market for one after this. My BIL came up and showed my son "how to". He's been making it for us the last couple years, turns out Great, so we are trying it.

        Going on an Axis hunt next weekend myself and planned to do the same with some of what I take. Looks amazing and makes me even more stoked about doing some jerky.

          Good luck on the hunt. Axis Jerky is the Best, makes you walk past the store bought crap once you had it. I'm going to go back out to our place in April and hope to get a couple more

            1st Batch done !

            Took off the first batch Dang it's good. Got 4 more to do May leave some for later this week, my BIL said the longer it sets to cure the better it taste. These were curing 24 hr and still turned out Great.

                I forgot to add, I also had to do a batch in the oven. Not enough room on the Pit.
                I will also say, I am using Hi Mountain Seasoning. Using the Regular and Mesquite Blend.

                      Another Batch!

                      Finished a batch of Mesquite, turned out pretty good. Only 4 more batches to go Started to vacuum seal them, don't use ziplocks, trust me from past experiences

                            200-225, for 2 hrs. flip over 1hr in. I had to move them around from the edges. First batch has some crispy ends on some. oven=200 with a wooden spoon leaving a crack in door.

                              That looks great!

                              I have discovered the Food Saver “portion bags” work great for jerky. They are divided down the middle length wise and make two bags each time you seal, you just zip them apart after sealing.
