I've never eaten water buffalo, but Oryx and Nilgai would be at the top of my list.

Eland, Oryx, Gemsbuck, Nilgai are exceptional. Elk is really good. It's all exceptional. Hard to complain about any of them.
I plan on adding a Nilgai to my freezer on Valentine's Day!

Exactly this, Elk would be last, although we had some Buffalo steaks at the lodge in S Africa & they were awesome. Oryx has to be the best I have had out of that group. Eland for size & tablefare would be my target.

Any on your list are fine table fare. In my opinion, nilgai is the best eating on your list. Eland is also very, very good and will yield considerably more meat.
