Venison Chop Steaks

Many of the local processors make venison chop steaks wrapped in bacon and sell them for $4+ a pound. I am assuming they maybe add some pork or beef, but they seem easy to make.

Does anyone have a recipe?

We make these and vac seal every year. 60/40 with brisket.
