    In the freezer or fridge?

I use plastic wrap but I've had venison well over 3 years old in the freezer that's just fine

I keep it till it’s eaten. If I can’t eat in Finley manner I give it to friends and family.

I have 3 year old items too but try to rotate the freezer as well.

Processed and packaged properly I can serve you a fresh backstrap, one from last season and one 3 yrs. I would bet you won't tell the difference

I can’t say, it doesn’t last that long around here. Usually eat three a year.

I have some left from last year for the first time ever. Got buried under other stuff. It won't last the week though. I'll save it from freezer burn.[emoji2][emoji106]

Found some Axis and Red Deer in the freezer 2 wks ago from 2014. Made Spaghetti the other night and Axis was still good! Still alive 10 days later.

If you are aging it in the fridge...21 days is optimal.

I Freeze all my doves / aged deboned venison in freezer ziplocks in water with no air...lasts years.

Mainly 3 years for me in the deep freezer. Probably would be good even longer but never last past 3.

I aspire to harvesting enough meat that I could have the issue of old meat.

                            Yep, some stuff gets forgotten..lol

I found some from 2014 that had a little oxidization on the outside, I cut that off, lost about 1/4" of meat but the stuff inside was still fine

I also use a chest deep freezer, a regular freezer/fridge combo doesnt stay as cold so probably wouldnt last as long

I had about 400#’s of elk sausage that lasted 4 to 5 years that was vacuum sealed that was as good at the end as the first package.
