Exotic does. Which one should I shoot?

Have a chance to go shoot an exotic doe this weekend. I think I will have opportunities at axis, fallow, and blackbuck. If it was up to you guys, which one would you shoot? Which is the best to eat? I may go after an axis for the hide. Hopefully I will have some good pics for you guys on Monday.

IMO, of those 3, the axis will be the best meat and the nicest hide to tan.

How would you guys process it?

Hang her by her back legs, split her down the belly, across the back legs, and then down with the hide. The front legs, split them on the inside towards her brisket, then take the hide to her neck.
