Tips on how to rig up this Penn Senator 4/0 Reel

Years ago, my Pappaw gave me a vintage Penn Senator Special 4/0 113H. It is on a Daiwa Apollo 1671-RT 6' rod.
I would like to put this rod back into action and catch some fish with it and think about my Pappaw when I do.
I don't have a surf rod, so I was thinking that maybe I could just purchase a 10 -12' surf rod and just put the reel on it? What pound test line should I put on the reel? I don't have a boat other than a kayak so I am limited to what this rod/reel are really supposed to be used.

A great option would be to put a top shot of mono (50lb-100lbs) then spool braid on top of it with a nice 10’ or longer rod and cast some chuck mullet out at the beach, or even kayak out larger bait for sharks

I have some 30# mono. How much should I use as backing or how do you know when you have the right amount? What braid should I use on top?

I use a 4/0 wide spooled with 80lb braid if you wanted you could top shot with 30-50lb mono. Just make sure you don’t put so much line that if you get un level reeling it in that it causes issues.
