    Snapper is popular because it's a mild tasting, white meat type of fish that has a good natural flavor. Kind of like chicken, it's edible with even a minimal amount of seasoning.

    For something a little different, perhaps try a parmesan crusted recipe. You really can't go wrong with any method mentioned on this thread.

              Put a double layer of foil on the grill, formed to make a “pan” about the depth of a cookie sheet. Put some butter down, and coat the foil. Season the filets with blackening (Chef Paul’s), and put the filets on the foil. Squeeze some lemon on them. Flip after a couple of minutes, and do the same. Pull off the grill, melt some butter, and pour a little on each filet, and eat!

                    If you have any extra fried snapper fillets, you can make spicy Chinese Sichuan Spicy Fish that goes great with some steamed rice.

                    I made this with some fish caught on Billy Keystone's charter out of Port A one year. It's good. I don't have to go out any pay for this dish any more.
