    Cold Smoked Salmon

    Any of you ever tried this? I tried yesterday after curing and "drying/airing out" the temp got above the recommended 80 degrees and reach 110... is it ruined or unsafe to eat? I got it cooled back down halfway through just curious if I need to start over.

    I don't know. All I ever et came from Alaska and it's to die for.
    I could sit down right now and eat a whole one.
    It may be OK and a little dry but all you can do now is try it out on a friend and see if they puke.

          It's too hot right now to cold smoke anything. It will probably be fine though.

            yea I had bunch ice in smoker and it was down to 75 inside smoker until it melted and sun hit smoker, bad placement on my porch.

                That is the way my Grandpa did it all the time, but this was in the Pacific Northwest. He smoked with a ton of smoke and no-to-little heat. Best smoked salmon I have ever had. Funny thing is I used to eat this stuff like candy since I was from there. Now to get the good stuff you have to float a bank loan.

                  I plan on giving this method a run soon just because the stuff in stores is so expensive.
